Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- 200 g oyster mushrooms
- 1 large red bell pepper(s)
- 1 red chili pepper(s)
- 1 onion(s), red
- 100 g sprouts, mung bean sprouts
- 250 g rice, Basmati wild rice
- 80 ml soy sauce
- 100 g cashew nuts
- 2 tbsp oil
- curry powder
- Paprika powder, hot
- black pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Prepare the rice according to the package instructions. Roast the cashews in a little oil until golden brown. Cut the chicken breast fillets, oyster mushrooms, and bell peppers into strips. Slice the onion into half rings. Finely slice the chili pepper. Add 2 tablespoons of oil to the wok and heat until hot. First, add the meat and fry for about 5 minutes. Then add the vegetables and fry for another 5 minutes. Add the soy sauce and cashews. Bring to a boil briefly and season to taste with curry powder, pepper, and paprika.
