Wild garlic cream soup

Ingredients for 4 servings:

  • 2 onions
  • 1 liter vegetable broth
  • 5 large potatoes
  • 100 g sour cream
  • some chili powder
  • 2 handfuls of wild garlic
  • some clarified butter, or butter
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the onions and fry in clarified butter or butter. Add the vegetable stock and the peeled, finely chopped potatoes. Simmer for about 15 minutes, then puree with a hand blender. Mix with the sour cream and season with salt and chili. Stir in the cleaned and very finely chopped wild garlic leaves before serving.
