Allgäu cheese soup with herbs

Ingredients for 4 servings:

  • 2 slices of toast
  • 1 tbsp oil
  • Salt
  • ¾ liter chicken broth
  • 4 tbsp white wine or some lemon juice
  • pepper
  • 200 g herb processed cheese, 60% fat
  • 2 egg yolks
  • 2 bunch herbs, mixed chopped
  • Worcestershire sauce

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Dice the bread and toast in hot oil. Bring the broth with wine or lemon to a boil and melt the crushed cheese, stirring constantly. On the side of the stove, stir in the egg yolks, whisked with a little broth, then stir in the chopped herbs and season with salt, pepper, and Worcestershire sauce. Sprinkle with bread cubes.
