Chinese garlic ribs

Ingredients for 1 servings:

  • 500 g pork ribs
  • 8 cloves garlic, crushed
  • 1 tbsp ginger powder
  • 1 tsp sugar
  • 6 tbsp soy sauce, not sweet
  • ½ tbsp brandy
  • 1 tsp five-spice powder

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 13 hours 10 minutes

Kao Pai Ku

Cut the pork ribs into bite-sized pieces. Mix the crushed garlic cloves, ginger powder, sugar, soy sauce, brandy, and five-spice powder into a paste and rub it into the ribs. Marinate, ideally overnight (but at least 1 hour). Simmer the ribs in a pan with a little water over medium heat for about 30-40 minutes (the ribs do not need to be seared). Then grill them in a preheated oven at 180-200°C for about 15 minutes. This dish goes best with rice and Chinese cabbage briefly steamed in a little oil.
