Pasta in spicy meat sauce

Ingredients for 4 servings:

  • 450 g minced meat, mixed
  • 2 spring onions
  • 450 g tagliatelle pasta
  • 1 clove(s) garlic
  • 1 tbsp spice paste (bean paste, hot), alternatively chili pepper or paprika paste
  • 2 chili peppers, red
  • 1 tsp fresh ginger, grated
  • 1 tbsp oil (sesame oil), dark
  • ½ tsp salt
  • 1 tsp sugar
  • 2 tbsp soy sauce
  • 1 tbsp tomato ketchup
  • 1 tbsp sherry (or sake), dry
  • 350 ml chicken broth
  • 1 tbsp cornstarch

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Chop the garlic clove, trim the chilies and spring onions, and slice them into thin rings. Heat the oil in a large pot. Sauté the garlic, ginger, and chilies until the garlic turns lightly (!) browned. Add the bean paste and stir in. Then add the minced meat and break it up with a wooden spoon, stirring occasionally. Sauté everything over medium heat until well combined. Combine the soy sauce, ketchup, sherry, chicken stock, salt, pepper, and cornstarch in a measuring jug and then pour it into the meat. Simmer everything for about 10-15 minutes. Meanwhile, cook the noodles in plenty of salted water until al dente. Drain well and toss with the sesame oil. Arrange the noodles on the plate, pour on the meat sauce, and garnish with the spring onion rings. Serve immediately.
