Broccoli and salmon in puff pastry

Ingredients for 4 servings:

  • ½ salmon, fresh, without skin and bones
  • 1 roll of (to taste) dough, frozen, thawed
  • 2 eggs
  • salt and pepper
  • 500 g broccoli
  • 500 ml vegetable stock
  • sesame

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Canadian cuisine, quick and easy

Simmer the broccoli in the broth. Meanwhile, clean half the salmon under running water and pat dry. Then roughly puree the broccoli with two or three eggs and season with salt and pepper. Roll out the puff pastry to the size of a baking sheet and spread with the broccoli paste. Place the half salmon on the rolled-out puff pastry, which has been covered with broccoli paste. Now spread the salmon with the remaining broccoli paste and carefully wrap the puff pastry around the fish. Before baking, brush with egg yolk and sprinkle with sesame seeds, if desired. Preheat the oven to 200°C (fan oven) and bake the salmon in the puff pastry for about 25 minutes.
