Ingredients for 8 servings:

  • 1 package of spring roll dough, frozen
  • 2 carrots, finely chopped
  • 1 jar sprouts (mung bean sprouts)
  • 3 spring onions, cut into rings
  • 200 g glass noodles
  • 1 egg(s)
  • Soy sauce
  • 1 liter of oil

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Thaw the frozen dough and cover it constantly with a wet cloth to prevent it from drying out. Meanwhile, soak the glass noodles in warm water for two minutes, then boil them for three minutes. Stir-fry the chopped vegetables in a wok (or pan) and mix with the cooked noodles. Season with soy sauce. Now fold each rice paper roll with a spoonful of filling like an envelope. Brush the folded edge with egg. Heat the oil and fry the rolls for 2-3 minutes until bubbles form on the roll.
