African plantain and mushroom pot

Ingredients for 4 servings:

  • 1 banana(s) (plantain), yellow, ripe
  • 5 potatoes
  • 1 onion(s)
  • 150 g mushrooms
  • 1 can of tomatoes, chopped
  • 200 ml coconut milk
  • 1 chili pepper(s)
  • salt and pepper
  • 2 tsp spice mix, African (Berbere), as desired
  • 1 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Finely dice the onion, and dice the plantain, potatoes, and mushrooms into approximately 1 cm pieces. Finely slice the chili. Heat the oil in a large pot. Sauté the onions until translucent. Add the tomatoes and spices and cook uncovered for 3 minutes over medium heat. Add the coconut milk and potatoes and cook for a further 3 minutes. Now add the plantain and mushrooms and cook uncovered over low to medium heat for 10-15 minutes. Stir in the chili and serve. Serve with rice or Inera bread.
