Ingredients for 4 servings:

- 12 apples, sour
- 4 tsp sugar
- 4 tsp marjoram
- 4 tbsp red wine
- some water
- 1 tsp pepper
- 1 tsp salt
- 4 tsp cranberries
- n. B. Butter for basting
- n. B. Water for drizzling

Rub the washed and dried ducks inside and out with salt, pepper, and 2 teaspoons of marjoram. Chill for 1 hour. Preheat the oven to 200°C. Wash and peel 8 apples. Remove the cores, quarter the apples, and sprinkle with 2 teaspoons of marjoram. Stuff the duck with the apples, sew it shut with string, baste with butter, drizzle with water, and place in the hot oven. Roast for 1.5 hours, basting with water occasionally and later with the meat juices. Turn the duck frequently during roasting. Wash the remaining apples, but do not peel them. Remove the cores with a teaspoon (or apple wedge) and fill the resulting indentation with the cranberries. Place in a small saucepan, add the wine and a few spoonfuls of water, and roast in the oven with the duck for about 30 minutes. Place the roasted duck and apples on a platter. Baste with the gravy and serve hot.
