Fiery banana soup with corn

Ingredients for 4 servings:

  • 1 tbsp butter
  • 2 onions
  • 2 garlic cloves
  • 2 large bananas (plantains), ripe
  • 1 tomato(s)
  • 1 can corn kernels
  • 1 chili pepper(s)
  • 1 liter vegetable broth
  • 1 tbsp parsley, chopped
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Plantains taste delicious and are filling!

Dice the onion and fry in butter until translucent, then add the garlic. Slice the plantains and dice the tomato, then add to the onions and fry. Drain the sweetcorn, add it, and simmer for about 5 minutes. Deseed and finely chop the chili pepper, and add it. Pour in the vegetable stock, mix everything well, and season generously with salt, pepper, and nutmeg. Finally, sprinkle with freshly chopped parsley. Note: Plantains can be found at a well-stocked Asian market.
