Ingredients for 1 servings:
- 60 g cane sugar
- 40 g salt
- 1 tsp pepper, coarsely ground
- 1 tbsp paprika powder, ideally smoked
- 1 tbsp onion granules
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp thyme
- 2 tsp marjoram
- 2 tsp rosemary
- 1 tsp ginger, dried, in pieces, alternatively powder
- 1 tsp coriander seeds
- 1 tsp kaffir lime leaves (preferably powder)
- 1 tbsp lemongrass powder
- 1 tsp mustard seeds, preferably yellow
- 1 tsp chili powder
- 2 cloves
- ¼ tsp vanilla sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
for pork, chicken, fish or vegetables – seasoning mix and rub with a Far Eastern touch
Weigh the salt and sugar and place them in a bowl. Prepare all the granulated spices for a mortar and pestle. These include rosemary, ginger pieces, coriander seeds, kaffir lime leaves, mustard seeds, and cloves. Grind these ingredients until finely ground, but not to a dust. Add them to the bowl along with the remaining ingredients and mix well. Transfer to a screw-top jar or, better yet, an airtight container. Store in a cool, dry place.
