Pasta bake with feta

Ingredients for 4 servings:

  • 250 g pasta, short (e.g. penne, fusilli, rigatoni)
  • 50 ml butter
  • 1 onion(s), chopped
  • 2 garlic cloves, finely chopped
  • 1 bell pepper(s), green, diced
  • 50 ml flour
  • 625 ml milk
  • 2 tbsp tomato paste
  • salt and pepper
  • 250 g feta cheese, diced
  • 125 ml Parmesan, grated
  • 125 ml black olives, pitted, sliced ​​(optional)
  • 2 tbsp dill or parsley, chopped
  • ½ tsp oregano, dried

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta in salted water according to the package instructions, drain well. Melt the butter in a large saucepan. Add the onion, garlic, and bell pepper and sauté for 3-4 minutes. Stir in the flour, then after about 3 minutes add the milk and tomato paste, stir well, and bring to a boil. Season with salt and pepper. Reduce the heat and simmer for 5 minutes, stirring frequently. Add the pasta and stir in. Add the feta, half of the Parmesan, olives, and herbs. Transfer to a baking dish and sprinkle with the remaining Parmesan. Bake in a preheated oven at 180°C for 25-30 minutes.
