Fried potatoes with egg

Ingredients for 6 servings:

  • 1 ½ kg potatoes, freshly cooked or from the previous day
  • 1 onion(s)
  • Oil (rapeseed oil)
  • Rosemary and/or thyme
  • Paprika powder, hot
  • salt and pepper
  • 1 egg(s), beaten

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the potatoes. Heat the oil in a pan, fry the onions until translucent, then add the potatoes and fry until browned. Grind the rosemary and/or thyme a little in a mortar and pestle, then generously mix it with the other spices into the fried potatoes. Now stir in the egg and fry everything briefly. This side dish is ideal for schnitzel and steaks.
