Cod with Dijon mustard sauce

Ingredients for 4 servings:

  • 2 tbsp flour
  • Salt
  • pepper
  • 4 cod fillets
  • 40 g butter
  • 40 g butter

  • 300 ml milk
  • 3 tsp mustard (Dijon)
  • 1 tbsp parsley, chopped
  • Salt
  • pepper
  • Parsley (sprigs) for garnishing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the flour with salt and pepper and toss the fillets in it. Place the fish in a grill pan and place it on the lowest rack of the grill. Sprinkle with butter and grill for 8 minutes on each side, until the fish is tender. Sauce: Melt the butter in a saucepan and stir in the flour. Brown for 1 minute, then remove from the heat. Slowly add the milk and heat again, stirring, until the sauce thickens. Add the mustard and parsley, and season with salt and pepper. Arrange the fish fillets on a warmed platter and pour the sauce over them. Garnish with parsley.
