Ingredients for 4 servings:

  • 1 eggplant(s)
  • 1 zucchini
  • 2 large tomatoes
  • 1 onion(s)
  • 1 tsp thyme, fresh
  • 2 cloves garlic
  • 3 tbsp olive oil
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brown the zucchini and eggplant slices in olive oil on both sides. Dice the onion and sauté in olive oil for about 15 minutes. Season with salt, pepper, and a pinch of sugar, and add about 5 tablespoons. Reduce the heat slightly. Slice the tomatoes and season with salt and pepper. Add crushed garlic and thyme leaves to each slice and fry in olive oil. Layer one slice of eggplant, one slice of onion puree, one zucchini, and one slice of tomato in each serving ring. Bake in the oven for 5 minutes just before serving.
