Ingredients for 2 servings:
- 1 cup rice (not fragrant rice)
- 1 cup coconut milk
- ½ tsp salt
- ½ tsp cinnamon
- Cardamom, green, one pod, ground
- 1 papaya, ripe
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
goes wonderfully with Galinha a Cafreal!
Bring coconut milk, salt, cinnamon, and cardamom to a boil. Simmer with the rice for 20 minutes on low heat. Then cool for 10 minutes. Puree 1/2 papaya and mix into the rice. Finely dice the rest and fold in. Serve hot.
