Apple and raisin risotto

Ingredients for 6 servings:

  • 50 g butter
  • 1 small onion(s), diced
  • 200 g basmati
  • 2 ½ g salt
  • 2 ½ g turmeric (turmeric/turmeric)
  • Spice mix (garlic and herb)
  • 100 g raisins
  • 25 g brown sugar
  • 7 ½ g cinnamon
  • 625 ml water, apple juice, white wine or cider
  • 6 apples (Granny Smith), peeled, pitted and quartered

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Sauté the onion in the butter until translucent. Add the rice, liquid, and spices and simmer over low heat, stirring frequently. Add a little more liquid if needed. After about 20 minutes, add the apples and simmer for another 5-10 minutes. Season to taste. In Namibia, this dish is often served with briefly pan-fried or grilled meat.
