Chickpea and Walnut Burger

Ingredients for 4 servings:

  • 1 small can of chickpeas, drained (400 g can)
  • 2 garlic cloves
  • ½ onion(s)
  • some rosemary needles
  • 1 cup(s) parsley, finely chopped
  • ½ cup(s) breadcrumbs
  • ¾ cup(s) walnuts, chopped and toasted
  • 1 egg(s)
  • 4 hamburger buns with sesame seeds
  • 1 beef tomato(s), sliced
  • 1 onion(s), red, sliced

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

In a blender, chop the first 6 ingredients, including the breadcrumbs, until finely chopped. Add the egg and nuts, and season with salt and pepper. Form some burgers from the mixture and fry in oil. Let rest for a while. If the mixture is too thin, add more breadcrumbs. Bake the sesame seed buns. Arrange the burgers, onions, and tomatoes on top.
