Cucumber and soba noodle salad with sweet chili dressing

Ingredients for 2 servings:

  • 150 g soba noodles
  • 3 radishes
  • 1 mini cucumber(s)
  • 1 tbsp sesame seeds
  • 4 tbsp soy sauce
  • 2 tbsp water, hot
  • 2 tbsp raw cane sugar
  • 1 tbsp rice wine vinegar
  • 1 tbsp garlic powder
  • 1 tsp chili paste (gochugaru)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 19 minutes

Combine the dressing ingredients in a blender and set aside. Cut the radishes and cucumber into sticks and sprinkle with a pinch of salt. After a few minutes, drain any excess water. Cook the noodles in boiling water for 4 minutes until tender, drain, and rinse with water. Immediately combine with the remaining ingredients, divide between 2 bowls, and serve sprinkled with sesame seeds.
