Ingredients for 6 servings:
- 500g tortellini
- 200 g dried tomatoes in olive oil
- 1 onion(s)
- 6 cherry tomatoes
- 3 tbsp olive oil
- 3 tbsp vinegar (white wine vinegar)
- 1 tsp thyme
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cook the tortellini (in broth, if desired), drain, and set aside. Sauté the finely chopped onion and thyme in olive oil until translucent. Add the finely chopped sun-dried tomatoes and fry briefly. Then add the tortellini and remove the pan from the heat. Season with salt, pepper, and the white wine vinegar. Finally, add the chopped cherry tomatoes.
