Simple red fruity-spicy Thai curry with minced meat and fried broccoli

Ingredients for 2 servings:

  • 50 g curry paste
  • ½ onion(s), diced
  • 250 g minced meat
  • 500 ml coconut milk
  • 1 broccoli
  • ½ tbsp soy sauce
  • 1 tbsp sauce (mango sauce)
  • ½ lime(s), juice
  • 1 handful of peanuts, chopped
  • some vegetable oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Brown the curry paste, onion, and ground beef in a pan with a little oil, deglaze with the coconut milk, and simmer gently. Meanwhile, cut the broccoli into small florets. Brown it in a pan with a little vegetable oil until it develops a roasted aroma, but the broccoli remains firm to the bite. Optionally, peel the broccoli stalk and fry it. Finally, add 1/2 tbsp of soy sauce. Add the mango sauce and the juice of 1/2 lime to the ground beef and simmer for another 5 minutes. To serve, garnish the curry with peanuts and broccoli. Serve with rice.
