Ingredients for 4 servings:

  • 500 g jacket potatoes, preferably from the day before
  • 1 m.-sized egg(s)
  • 1 pinch of salt
  • 1 pinch of nutmeg
  • some flour
  • 500 g smoked pork or smoked meat cut into cubes
  • 500 g mixed dried fruits (apples, plums, apricots, raisins)
  • 250 ml meat broth
  • Oil or margarine for frying
  • Pepper, freshly ground
  • Sauce thickener, dark

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with Silesian dumplings

Heat oil or margarine in a pan. Brown the smoked pork in it. Add the dried fruit and broth, season with pepper, and simmer for about 1.5 hours. Thicken with a sauce thickener and season with salt and pepper. Silesian dumplings: Peel the potatoes, mash them, add the egg, salt, and nutmeg, and mix well. If too wet, knead in a little more flour. Form them into dumplings and add them to boiling salted water. Reduce the heat. The dumplings are done when they all float to the surface. Serve everything together. This dish used to be distributed free of charge on the emperor’s birthday in Upper Silesia. My grandmother comes from there (Breslau).
