Duck with oranges and apples

Ingredients for 4 servings:

  • 4 legs of duck
  • 2 large onions (vegetable onions)
  • 2 oranges
  • 2 apples
  • 4 cloves garlic
  • 50 g paprika powder
  • 1 tsp black pepper
  • 2 tsp salt
  • 1 pinch(s) of cayenne pepper
  • 50 ml vegetable oil (e.g. sunflower oil)
  • 1 kg potatoes

Duck legs braised with oranges, apples and onions

Peel the potatoes and place them in a pot with plenty of water and 1 teaspoon of salt. Peel the oranges and apples and cut them into eighths. Quarter the onions. Use a hand blender to puree the pepper, garlic cloves, 1/4 orange, 1/4 apple, 1 teaspoon of salt, oil, and paprika into a marinade. Pre-roast the duck legs in the oven on a roasting tin at 220 degrees Celsius for 15 minutes. Then rub both sides with the marinade. Cook for another 15 minutes. Add the apples, oranges, and onions to the legs on the roasting rack and cook for another 30 minutes. At the same time, bring the potatoes to a boil and serve as a side dish. Use the cooking juices as a sauce. Remove the outer skins from the onions and serve the onions, oranges, and apples as a side dish.
