Ingredients for 1 servings:

  • 125 ml water
  • 225 g flour (type 505)
  • 1 tsp salt
  • 1 tsp yeast (dry yeast)
  • Sesame, poppy seeds or herbs, for sprinkling

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Mix the flour, salt, and yeast in a bowl. Make a well in the center and pour in the lukewarm liquid. Knead into a firm dough. Knead for 10 minutes until smooth and elastic. Form the dough into a ball. Take a walnut-sized piece of dough and shape it into a small log. Continue with the remaining dough, forming about 30 logs in total. Lightly grease four baking sheets. On an unfloured surface, shape the dough rolls into 1 cm thick sticks. Roll some sticks in poppy seeds or sesame seeds (or herbs, if desired). Place the sticks on the baking sheets. Cover and let rise in a warm place for about 15 minutes. Preheat the oven to 200°C (180°C fan, gas mark 3). After 8-10 minutes of baking, flip the sticks and bake for another 6-7 minutes, being careful not to overbrown them. Let cool.
