Ingredients for 1 servings:

  • 8 chicken meatballs (Bakso Ayam, fresh or frozen, see appendix)
  • 4 tbsp palm oil, premium quality
  • 20 g chayote(s), fresh, (alternatively kohlrabi)
  • 25 g carrot(s), in sticks
  • 25 g beans, green, long (runner or bush beans)
  • 20 g broccoli florets, fresh
  • 30 g pineapple, fresh or canned
  • 1 spring onion(s), fresh
  • 1 Pepper, red, long
  • 15 g white cabbage, some fresh leaves
  • 15 g mustard greens, Chinese
  • 20 g pea pod(s), young, green
  • 60 g orange juice or water
  • 1 tbsp soy sauce (Kecap Tim Ikan, see appendix)
  • 5 tbsp plum sauce (golden plum sauce, see appendix)
  • 1 tsp tapioca flour
  • 1 tbsp rice wine, Chinese (Arak Masak)
  • 1 tsp instant chicken broth
  • n. B. flowers and leaves

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Stir-fried vegetables with spicy chicken meatballs. Recipe from Bali, Indonesia.

Either make the bakso fresh or count them and thaw them. Use smaller bakso whole, cut larger ones in half. The vegetables are a suggestion and can be varied as desired. Wash fresh vegetables, peel if necessary, and cut into bite-sized pieces. Keep the green parts of the spring onions separate from the white parts. Mix the ingredients for the Cap Cay sauce and bring to a boil, stirring in the tapioca flour to thicken. Remove from the heat and keep warm. Steam the bakso over boiling water. Heat a sufficiently large pan or wok, add the palm oil, and heat until hot. Then add the ingredients, from chayote to chili peppers, excluding the green spring onions, and stir-fry for 2 minutes. Add the remaining ingredients, mix, and stir-fry for 1 minute. Transfer to a serving platter, place the bakso on top, pour over the sauce, garnish, and serve hot. In Indonesia, Cap Cay with white, cooked rice is a main course.
