Ingredients for 1 servings:
- 120 g chicken
- 1 bunch of basil (spicy Thai basil, Krapao or Holy Basil)
- 1 large shallot(s)
- 1 tbsp chili paste or 5 small chili peppers, red, chopped
- 1 garlic clove(s)
- some fish sauce
- some soy sauce, light
- n. B. Oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Gai Pad Krapao
Heat the oil in a pan or wok. Meanwhile, cut the chicken and onions into small pieces or strips and add them to the hot pan along with the chopped chilies or chili paste. Thinly slice the garlic clove and fry it too. If you don’t like the bitter aroma of roasted garlic, you can add the garlic later. Sauté everything until crispy, stirring constantly. Only roughly chop the krapao. Add the tough stems first and fry them briefly. Only then add the chopped leaves. Once the krapao has been added, fry for no longer than 2-3 minutes. Mix everything well and season with a little fish sauce (about 1/2 small teaspoon per serving) and a little light soy sauce. This tastes best with steamed rice.
