Ingredients for 4 servings:

  • 1 package of herbs for green sauce, fresh
  • 500 g sour milk
  • 200 g sour cream
  • 1 tsp mustard
  • salt and pepper

Wash the herbs and pat dry. Add all the coarse leaves and the parsley stalks to the Thermomix. Set aside fine herbs such as cress, pimpernel, and the curly parts of the parsley. Finely chop the chives by hand. Add the sour cream to the mixing bowl and blend for 20 seconds on speed 10. Reduce to speed 5 and add the reserved herbs while the blade is running. Blend for another 30 seconds, briefly pressing the turbo button two or three times. Empty the contents into a bowl, stir in the chives, mustard, and sour cream, and season with salt and pepper. Serve with hard-boiled eggs and boiled or boiled potatoes. Note: There are already several recipes for Frankfurt Green Sauce, but here, in addition to the ingredients, the right consistency is also important. In the Rhine-Main area and large parts of Hesse, you can buy green sauce in a ready-made package in paper at any fruit and vegetable store or large supermarket. Now also available all year round, but from autumn until before Easter only on request.
