Ingredients for 1 servings:

  • 120 g margarine (semi-skimmed)
  • 120 g sugar
  • Vanilla pod(s), the pulp
  • 1 orange(s), untreated, grated peel
  • 4 eggs
  • 190 g flour
  • 200 g starch flour
  • 2 tsp baking powder
  • 3 tbsp low-fat milk
  • 500 g plum(s) (alternatively canned without sugar)
  • 500 g apples
  • ½ tsp cinnamon
  • 1 tbsp sugar

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Whisk the margarine, sugar, vanilla pulp, and orange zest until fluffy. Combine the flour, cornstarch, and baking powder, sift, and gradually fold in. Add the milk until the batter falls heavily from the spoon, then spread evenly onto a baking sheet lined with baking paper. Stone and halve the plums, core the apples, cut them into wedges, and top the batter with both. Mix the cinnamon and sugar and sprinkle over the batter. Bake the fruit cake in a preheated oven on the middle rack at 180°C (gas mark 2, fan oven 160°C) for about 35 minutes.
