Scallops with mie noodles

Ingredients for 4 servings:

  • 250 g scallop(s), small, boned
  • 2 small onions
  • 1 pepper, red
  • 1 bunch of spring onions
  • 1 bunch of coriander leaves
  • 200 g noodles (mie noodles)
  • 3 tbsp oil
  • ½ tsp five-spice powder
  • 2 tbsp sesame seeds
  • 1 tsp oil (sesame oil)
  • 1 tbsp soy sauce
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

So Xao Mi

Wash the scallops and pat dry. Peel and finely chop the onions. Slice the red chili peppers into rings. Wash the spring onions and cilantro leaves; cut the spring onions into 3 cm pieces and tear the cilantro leaves. Cook the mie noodles in salted water according to the package instructions (it’s actually very quick). Heat 3 tablespoons of oil in a wok and fry the scallops in two batches for about 1-2 minutes if there isn’t enough room in the wok. Remove and set aside. Add the onions, peppers, spring onions, five-spice powder, and sesame seeds to the wok. Season with salt and fry for about 1 minute, stirring constantly. Add the sesame oil, cilantro leaves, noodles, and scallops and heat until hot. Season to taste with salt and soy sauce and serve.
