Ingredients for 4 servings:

  • 500 g carrot(s)
  • 500 g onion(s)
  • 1 apple
  • 300 g chicken
  • 1 tbsp oil
  • 1 tbsp curry
  • 1 tbsp sugar
  • 100 ml water (or 6 tbsp)
  • 1 tbsp vegetable broth (powder) or chicken broth
  • 2 tbsp currants
  • 1 pinch of cinnamon
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel, wash, and thinly slice the onions and carrots. Peel and core the apple, then cut it into thin wedges. Cut the chicken into thin strips. Brown everything in oil, add the curry powder, and sauté briefly. Sprinkle the sugar over the onions and let it caramelize. Deglaze with water, add vegetable or chicken stock, and bring to a boil. Sprinkle 1 tablespoon of currants over the onions and sauté for about 20 minutes. Season with cinnamon and season with salt and pepper. Serve with a wild rice blend.
