Kale casserole with mashed potatoes

Ingredients for 4 servings:

  • 2 kg kale
  • 4 sausages (Mettwurst)
  • 1 kg potatoes
  • Milk
  • olive oil
  • nutmeg
  • Salt

Cut the Mettwurst into thin slices and then fry them until crispy. Wash the kale (2-3 kg, depending on your taste) thoroughly and tear it into small pieces. Drain and cook with the Mettwurst (about 30 minutes), then season gently with salt (other seasonings according to your taste). At the same time, boil the peeled potatoes (like boiled potatoes), then mash them with a little milk and season with a dash of olive oil and, if possible, freshly grated nutmeg. First, add the kale and Mettwurst mixture to a baking dish and smooth it down, then spread the potato mixture evenly on top. Place the whole thing in the oven at 180°C (350°F) with fan/convection until the potatoes start to brown (about 20 minutes), by which time the kale underneath will be nice and warm again.
