Ingredients for 2 servings:
- 2 tbsp curry paste, yellow, Thai
- 2 chicken breast fillets, cut into strips
- 350 g peach(s), fresh, skinned, thinly sliced
- 250 g broccoli
- 150 g mushrooms, quartered
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 200 ml coconut milk
- Oil (peanut or sesame oil)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the chicken breast strips in oil, then set aside. Brown the curry paste in the oil over low heat, then add the coconut milk, stir, and bring to a boil briefly. Add the broccoli, mushrooms, and chicken breast, stir in the fish sauce and palm sugar. Cook for 5 minutes over medium heat, then add the peach slices and simmer for a while longer, but do not allow the vegetables to become too soft. Serve with rice.
