Ingredients for 6 servings:

  • 2 kg potatoes
  • 2 stalk(s) leeks
  • 2 handfuls of bacon, diced
  • 1 ring/s of meat sausage, possibly with garlic
  • 2 onions
  • 2 tbsp olive oil
  • 100 g butter
  • Crème fraîche or sour cream
  • Salt and pepper, white
  • Maggi or Maggi herb (lovage)

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel the potatoes and boil them in plenty of salted water. Meanwhile, finely chop the onions and brown them in olive oil. Add the bacon or diced sausage and simmer over very low heat. Finely chop the leek and add it to the onions and sausage/bacon cubes. Turn off the heat. When the potatoes are cooked, drain off the water and reserve it. Mash the potatoes together with the butter until finely chopped. Stir the onions, leek, and sausage/bacon cubes into the potato mixture and gradually add the reserved potato water, stirring constantly (I usually need all the water). Then simmer over low heat for about 10 minutes and season with crème fraîche or sour cream, salt, white pepper, and Maggi or Maggi herb.
