Thai red minced meat curry with basil

Ingredients for 4 servings:

  • 2 tbsp oil, neutral
  • 2 tbsp Thai curry paste, red, adjust to desired spiciness
  • 2 garlic cloves, chopped
  • 3 shallots, finely chopped
  • 600 g minced beef
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 400 ml coconut milk
  • 1 tsp sugar
  • 1 red bell pepper(s), cut into small pieces
  • 4 spring onions, green parts only, cut into rings
  • 1 bunch basil, roughly chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Brown the minced meat in 1 tablespoon of oil and remove from the pan. Add the remaining oil and the curry paste to the pan and fry for 1-2 minutes. Add the garlic and shallots and continue frying for a few minutes. Add the minced meat, coconut milk, fish sauce, oyster sauce, and sugar. Simmer over medium heat for about 15 minutes. Add a little water if necessary. Add the bell peppers and simmer for another 5 minutes. Add the basil before serving. Sprinkle the spring onions over the top.
