Ingredients for 4 servings:

  • 1 kg pumpkin flesh
  • 2 onions
  • 2 tomatoes
  • 30 g butter
  • salt and pepper
  • 1 pinch(s) of sugar
  • lemon juice
  • some broth

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the pumpkin into cubes. Blanch the tomatoes, peel them, and dice them. Dice the onions. Sauté the onions in hot butter, add the pumpkin pieces, and sauté for 5 minutes. Add the diced tomatoes. Season with salt, pepper, lemon juice, and sugar. Sauté for about 10 minutes until soft. Add a little more stock if needed. Season the vegetables again to taste. Tip: You can also quarter the tomatoes and add them with the pumpkin pieces. They will peel themselves; you just have to remove the skin.
