Quick celery and carrot salad

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 375 g celeriac
  • 1 tbsp oil
  • 2 tbsp parsley, chopped for sprinkling
  • 150 g sour cream
  • 1 pinch of sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Peel and wash the celery, and cook it whole in boiling salted water for 20 minutes. Remove the celery, let it cool, and then cut it into strips. Peel, wash, and grate the carrots. For the salad dressing, mix the cream with the oil. Season with salt, pepper, and sugar. Combine the salad ingredients and the salad dressing and let it marinate. Sprinkle with chopped parsley before serving. Approx. 116 kcal per serving.
