Ingredients for 4 servings:

  • 1 kg Kasseler rib spear
  • Water or broth
  • 1 onion(s)
  • 1 tomato(s)
  • Flour
  • sour cream or red wine

Working time approx. 20 minutes; Total time approx. 20 minutes

An old family recipe that can be prepared on the stovetop or in a roasting pan in the oven (225-250°C). Remove the bones from the meat. Wash and dry the meat. Brown the bones and meat in a roasting pan. Deglaze with a little water. Peel and halve the onion. Blanch the tomato, rinse, and peel, then cut into quarters. After 15 minutes of roasting, add the onions and tomatoes to the meat. After 30-45 minutes, add water or broth, bring to a boil, thicken with flour, and season with sour cream or red wine. We always serve it with sauerkraut and mashed potatoes.
