Poached beef fillet with orange and tarragon hollandaise sauce and asparagus

Ingredients for 4 servings:

  • 650 g beef fillet(s)
  • 2 tbsp fat (vegetable cream with butter flavor)
  • 2 tsp beef broth
  • 500 ml water
  • 300 g asparagus, white, ready to cook
  • 300 g asparagus, green, ready to cook
  • 100 ml orange juice
  • 250 ml Hollandaise sauce, ready-made product
  • Tarragon, dried or fresh

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sear the beef fillet in vegetable fat. Add the beef broth to boiling water and simmer the fillets. Cook the asparagus as usual. Make a sauce from the orange juice, hollandaise sauce, and tarragon, and bring to a boil briefly. Arrange the asparagus, fillets, and hollandaise sauce on plates. Serve with the croquettes.
