Pork fillet Asian style

Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 1 large bell pepper(s), red
  • 200 g bamboo shoots (can)
  • 8 slices of pineapple (can)
  • 2 tbsp soy sauce
  • 4 tbsp sugar
  • 2 tbsp pineapple juice
  • 6 tbsp rapeseed oil
  • salt and pepper
  • cornstarch if needed
  • possibly water if needed

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cut the pork fillet into cubes. Clean the bell pepper and cut it into bite-sized pieces along with the pineapple and bamboo shoots. Mix together soy sauce, salt, pepper, pineapple juice, and 2 tablespoons of rapeseed oil to make a marinade. Place the meat cubes in the marinade for about 30 to 45 minutes. Then remove the cubes and let them drain in a sieve, reserving the marinade. Heat the remaining oil in a pan and sear the meat cubes on all sides. Remove them and keep warm. Carefully pour the marinade into the frying oil and sauté the bamboo shoots, pineapple, and bell pepper pieces for about 3 minutes. If desired, thicken the mixture with cornstarch mixed with water and season with salt and pepper. Mix in the meat cubes and serve warm. Serve with whole-grain rice.
