Turkey Mango Ragout

Ingredients for 4 servings:

  • 500 g turkey breast
  • 2 onions, red
  • 2 cloves garlic
  • 2 cm ginger root
  • 2 mangoes
  • 25 g butter
  • 3 cloves
  • 3 cardamom pods
  • 1 stalk(s) cinnamon
  • ½ tsp caraway powder
  • ½ tsp coriander powder
  • 250 g natural yogurt
  • Salt and pepper, black
  • 1 tbsp parsley, finely chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the turkey breast into bite-sized pieces. Peel and finely chop the onions, garlic, and ginger. Peel the mangoes. First, remove the flesh from the stones, then cut into thin wedges. Melt the butter in a pan. Brown the turkey breast for about 5 minutes until browned all over. Add the onions, garlic, cloves, cardamom, and cinnamon stick. Fry for 5 minutes, stirring occasionally. Stir in the mango, ginger, caraway seeds, and coriander. Cook over low heat for 5 minutes. Mix in the yogurt and heat briefly, but do not allow to simmer. Finally, season with salt and pepper and sprinkle with coriander. Serve with rice.
