Chicken breast fillet in peach sauce

Ingredients for 4 servings:

  • 2 peaches
  • 1 onion(s)
  • 30 g butter
  • 100 ml wine, white, dry
  • 100 ml cream
  • 1 tbsp lemon juice
  • Salt
  • Pepper, freshly ground
  • 1 pinch(s) of sugar
  • 1 tsp curry
  • 4 chicken breast fillets (approx. 600 g)
  • 1 tbsp oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the peaches and cut the flesh into wedges. Peel the onions, finely dice them, and sauté them in butter until translucent. Add the peaches, wine, and cream and cook for 10 minutes. Season the sauce with lemon juice, salt, pepper, sugar, and curry powder. Remove a few peach slices from the sauce, puree the rest, and then add the slices back in. Brown the fillet in hot oil, cook for about 6 minutes, season with salt and pepper. Add the meat juices to the sauce and season to taste. Slice the meat and serve with the sauce. Serve with rice. Variation: You can replace the cream with coconut milk. This dish also tastes good with turkey.
