Ingredients for 4 servings:
- Offal (one lung, heart, kidney, spleen each), from pork
- 2 onions
- 1 bay leaf
- 5 juniper berries
- 2 vegetable stock cubes
- Vinegar
- Salt
- pepper
- Flour
- butter
Instructions

Wash the giblets, place them in a stock of water, onions, bay leaves, juniper berries, vinegar, salt, and pepper, and cook until the giblets are tender. Strain and pass the stock through a sieve into a saucepan. Make a brown roux and add it to the boiling stock along with the stock cubes. Bring to a boil and add more seasoning if desired. Chop the cooled giblets into small pieces, add them to the sauce, and let them simmer for about half an hour. Pasta goes well with this.
