Ingredients for 1 servings:

  • 250 g butter or margarine
  • 300 g sugar
  • 1 packet of vanilla sugar
  • 6 eggs, separate
  • 1,000 g quark (20% fat)
  • Lemon juice from one fruit
  • 7 tbsp semolina
  • 2 tsp baking powder
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cream the butter until fluffy, add the egg yolks, sugar, and vanilla sugar. Stir in the quark. Add the lemon juice, semolina, and baking powder. Finally, fold in the stiffly beaten egg whites and pour into a greased 26cm springform pan. Bake in a convection oven at 150°C for about 1 hour. Note: Don’t open the oven right away, as this will cause the cake to collapse and crack. It’s better to leave a small gap and let it cool slowly.
