Ingredients for 4 servings:

  • 700 g potatoes, raw
  • 300 g potatoes, boiled
  • 2 egg yolks
  • 1 medium-sized onion(s), chopped
  • 100 g bacon or ham, diced
  • Butter for frying
  • salt and pepper
  • nutmeg
  • n. B. Potato flour for binding

Grate the cooked potatoes into a bowl. Grate the raw potatoes into a cloth, squeeze them dry, and add them to the bowl. Add the egg yolk, salt, nutmeg, and pepper and mix everything into a smooth dough. Add a little more potato flour for better binding. Form the dough into even-sized, oblong dumplings. Cook the dumplings in boiling salted water for about 10 minutes. Then refresh and let cool. Before serving, fry the bacon and onion cubes in butter and lightly brown the dumplings in it. If the dumplings are the main course, serve with homemade applesauce and beer. They go well as a side dish with hearty meat dishes.
