Hazelnut cookies

Ingredients for 1 servings:

  • 300 g hazelnuts, ground
  • 90 g brown sugar (raw cane sugar)
  • 2 egg whites
  • 2 tsp honey
  • 80 g jelly (blackberry or plum jam)
  • 1 pack of cake icing, dark

Instructions

Working time approx. 40 minutes; Rest period approx. 5 days 20 hours; Total time approx. 5 days 20 hours 40 minutes

Christmas biscuits, makes about 45 pieces

Set aside 4 tablespoons of the hazelnuts. Knead the remaining nuts with the sugar, egg white, and honey to form a firm dough. If it’s too sticky, chill for about 1 hour. Roll out the dough to a thickness of 0.5cm on a work surface sprinkled with the remaining hazelnuts. Line a baking tray with baking paper. Cut out cookies, e.g., stars, and place on the tray. Preheat oven to 200°C (top/bottom heat) and bake for about 6-8 minutes. Spread the cooled cookies, one pair at a time, with jelly or jam and stack them together. Dip in melted chocolate glaze and let dry on a wire rack.
