Ingredients for 1 servings:

  • 5 eggs
  • 200 g flour
  • 200 g sugar
  • 1 tsp baking powder
  • 2 tbsp cocoa powder
  • 3 cups of cream
  • 750 g cherries
  • ½ cup cherry juice
  • some cherry brandy as needed
  • possibly chocolate shavings for decoration
  • possibly cherry(s) for decoration

Working time approx. 50 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 50 minutes

Beat the eggs with the sugar until frothy. Fold in the flour, baking powder, and cocoa powder. Pour the sponge cake mixture into a prepared baking pan. Bake in a preheated oven at 175°C for approx. 35 minutes. Cool and let rest overnight. Now cut horizontally twice, making a thinner top than the bases. Drain the cherries thoroughly. Whip the cream until stiff. Mix the cherry juice with kirsch (alcohol content according to taste). Soak the first layer with 1/3 of the juice mixture. Place half of the drained cherries on the base and cover with 1/3 of the cream. Then place the next layer on top and also soak with 1/3 of the juice mixture. Arrange the remaining cherries on top and spread with 1/3 of the cream. Then soak the third and final layer with the remaining juice mixture. Spread the remaining cream all over. Decorate with chocolate shavings and cherries as desired.
