Vegetarian gnocchi and vegetable casserole

Ingredients for 4 servings:

  • 1 kg gnocchi
  • 2 bell peppers, red
  • 1 zucchini
  • 2 onions
  • 1 can tomatoes, pureed, approx. 400 g
  • 50 g cheese, grated
  • 3 tbsp honey, optional
  • 1 tbsp mustard, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the gnocchi according to the package instructions. Slice the vegetables into strips and roast. You can also use any other vegetables. Place the gnocchi in a baking dish and add the passata. Then add the vegetables and mix everything well. Optionally, add the honey and mustard. Mix everything again. Sprinkle with cheese. Place the casserole in the oven at 180°C (350°F) for 20 minutes.
