Sweet potato gratin

Ingredients for 4 servings:

  • 800 g sweet potatoes, approx. 2 pieces
  • 200 ml whipped cream
  • 100 g sour cream
  • 50 g cheese, grated, e.g. mozzarella
  • 1 tbsp chives
  • 1 tsp curry powder
  • 1 tsp butter
  • 50 g soft goat cheese

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 180°C (top/bottom heat) and prepare a baking dish. Peel and wash the sweet potatoes, and thinly slice or grate them. Then, pour the cream into a bowl or measuring jug and mix with the grated cheese, sour cream, chives, curry powder, salt, and pepper. Grease the baking dish with butter. Place the sweet potato slices in the dish and pour the curry cream over them. Finally, tear or dice the goat cheese and sprinkle over the top. Bake in a preheated oven at 180°C (top/bottom heat) (fan oven: 160°C, gas mark 2-3) for about 45 minutes on the middle rack. When the gratin is ready, let it cool slightly and serve in the dish. Approx. 505 kcal per serving.
