Ingredients for 4 servings:
- 1 pack of pastry sheets (strudel dough, filo/yufka sheets)
- 150 g couscous
- 1 small eggplant(s)
- 1 zucchini
- 350 g mushrooms
- 2 small carrots
- 2 spring onions
- 1 onion(s)
- 2 garlic cloves
- 300 ml vegetable stock
- 150 ml soy cream (Soy Cream Cuisine)
- 2 tbsp parsley, chopped
- 1 tbsp coriander, chopped
- 1 tsp spice mix (seven spice mix)
- 1 tsp tandoori masala
- ½ tsp cumin powder
- e.g. cayenne pepper or ground chilies
- n. B. Pfeffer
- e.g. soy milk (soy drink)

Wash and clean the vegetables as usual. Slice the eggplant and zucchini, season with salt on both sides to absorb some of the water, and set aside. Pour the vegetable stock over the couscous in a large bowl and let it swell. Dice the mushrooms, finely grate the carrots, slice/ring the spring onions, and finely chop the onions and garlic. Rinse the eggplant and zucchini, drain, squeeze dry if necessary, and also dice. Mix the vegetables, couscous, herbs, and spices to make a filling. Since the vegetables will still release water, it shouldn’t be too wet and sticky; rather, it should still be a bit crumbly. If desired, you can also add a little soy cream. The vegetable stock practically eliminates the need for salt! Lay half of the pastry sheets on a damp kitchen towel and brush each one thinly with soy milk. Spread half of the filling on top, about the thickness of a small finger, leaving 2-3 cm free at the edges. Brush the edges with soy milk. Using the towel, roll up the strudel, tuck in the ends, and place the strudel seam-down in a baking dish (this is easiest if you lift it with the towel and let it roll out of the dish). Repeat with the other half of the pastry sheets and the filling. Brush the strudel generously with soy milk and bake at 200°C for 35-45 minutes, depending on the desired browning. The seven-spice mix is available at oriental supermarkets, for example; it contains sweet paprika, pepper, cumin, fenugreek, thyme, dill, and sumac.
