Ingredients for 4 servings:
- 75 g butter, for the dough
- 150 g flour (wheat flour), freshly ground
- 3 tbsp water, for the dough
- tsp salt, for the dough
- 1 pinch of nutmeg, for the dough
- 250 g mushrooms
- 250 g onion(s)
- 2 tbsp butter
- 3 eggs
- 100 g cream
- 1 tbsp flour
- 100 g cheese (Gouda), grated
- 3 tomatoes
- salt and pepper
- basil
- oregano
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
For the dough, knead all ingredients with a dough hook. Line the dough in a springform pan and bake for about 8 minutes at medium heat. For the filling, slice the onions and mushrooms. Sauté both in butter. Whisk the eggs, cream, flour, and spices together with the cheese, add to the mushrooms and onions, and spread over the dough. Arrange the tomato slices in a ring shape on top. Bake the quiche for another 20-30 minutes at 200 degrees Celsius, until the egg mixture has set.
